05/06/2009 - For years, chef Matt Carter has headed one of the Valley's best French restaurants, Zinc Bistro. But last year, he also got a Latin American itch, which he has been scratching at the Mission. Turns out that SeƱor Carter is just as talented as Monsieur Carter. The fare hits the pan-Latin buttons. One of the most beguiling first-course dishes is almejas al vapor, steamed with clams with rock shrimp, chorizo, yucca and corn. Posole also has many food things going on in the tangy red-chile broth, including smoked pork, hominy, cabbage and avocado. Main dishes are inspired, from the giant scallops with serrano ham and grilled octopus to the pineapple-glazed pork shoulder for two, goosed up with Cotija, chiles and cilantro. Factor in maybe the best mojito in town, and you've got one unforgettable meal.
